semplici barattoli di verdure, un po&#8217; di sale e tanta curiosit\u00e0. Oggi, Condito Ferments di Bolzano produce kimchi maturi, sottaceti fermentati e aceti speciali a partire da verdure e frutta biologiche regionali.<br\/>Ci affidiamo alla tradizionale fermentazione lattica, che non richiede alcun riscaldamento. In questo modo i preziosi lattobatteri rimangono vivi e i sapori complessi. I nostri kimchi sono ispirati alla Corea, ma adattati ai nostri ingredienti e sapori. Gli aceti vegetali sono ottenuti da eccedenze fermentate, nello spirito di una produzione ecologicamente consapevole.<br\/>Per noi la lattofermentazione \u00e8 molto pi\u00f9 di una semplice conservazione: \u00e8 una pratica antica che mostra nuove strade, tra salute, sapore e conservazione delle risorse. Che si tratti di ciotole, condimenti, piatti a base di carne o verdure, i nostri fermenti portano profondit\u00e0, freschezza e umami in cucina.<br\/>Controlliamo ogni lotto quotidianamente, monitoriamo il processo di maturazione a mano e produciamo solo in piccole quantit\u00e0.
