Nel XX secolo, intere famiglie si recavano in campagna la mattina presto per raccogliere i capperi, uno per uno, dalle piante basse e cespugliose. Quando arrivano qui, i capperi vengono lavati, asciugati e fatti maturare sotto sale per 3-4 mesi.
