Si tratta del cosiddetto tipo “viola”, originario di questa zona. Non viene propagata nei vivai, ma viene coltivata prelevando le piante dalle piantagioni esistenti. La semina inizia a ottobre e la raccolta a marzo. I primi esemplari vengono raccolti con il gambo intero. La lavorazione, che avviene entro otto ore dalla freschezza, consiste nella defogliazione iniziale e nella pulizia manuale con un coltellino e uno spelucchino.
