Il garum veniva gi\u00e0 prodotto nell’antica Roma a partire dal pesce, che veniva salato e fatto fermentare al sole in vasi per diversi mesi. Nella versione moderna, la carne di animali o di pesce viene mescolata, fatta fermentare con almeno l’8% di sale e koji per 8 mesi. Il risultato \u00e8 una salsa scura che aggiunge complessit\u00e0 e sapore umami a piatti e salse e pu\u00f2 essere utilizzata anche al posto del sale. Il sale utilizzato proviene dalle saline di Cervia ed \u00e8 naturale al 100% senza aggiunta di iodio. <\/p>\n
