Description
Long tomatoes are grown in April and May, and harvested by hand in July and August, all within our farm. They are washed, selected, cut, placed on drying frames, salted and left in the sun for 4-5 days. Then comes a new selection and a new washing with water and vinegar. Finally, they are seasoned with Mediterranean spices and potted. To obtain 1 kg of dried tomatoes, about 10 kg of fresh tomatoes and more than 130 hours of processing are needed.
Ingredients: sun-dried long tomatoes (65%), extra virgin olive oil (30%), capers, chilli pepper, garlic, aromatic herbs, wine vinegar, salt, sugar, lemon juice.
