Description
Puntarelle’ are the heart of CICORIA CATALOGNA, a typical salad of our region. We transplant in October and harvest the vegetable between January and February. Our women defoliate the plant and manually cut the ‘scattuni’, i.e. the sprouts, and delicately place them in the tannery to ripen for a few days, then they are picked and preserved in oil without the addition of flavourings or spices.
