Agro di Mosto is only ever made from cooked must from local grapes, which is slowly matured in oak barrels (barriques).
The name reflects the soul of the product: a must, cooked and obtained mainly from Lambrusco grapes, which is aged by slow acidification in half-filled barrique barrels.
With this product, we have created an economical and super sustainable alternative to the usual industrial balsamic vinegar for the gourmet (private or catering). Raw food and salads are its main target, add it to a suitable dish during the last 3-5 minutes of cooking, it gives it a beautiful dark colour and a fine sweet and sour note.
As with other balsamic dressings, it is better to dissolve the salt and pepper in the balsamic vinegar first and then mix it with a good extra virgin olive oil, or even better, emulsify it.
