Description
They are typical of the Salento landscape and the farming tradition. In the 20th century, whole families flocked to the countryside early in the morning to pick capers, one by one, from the low, bushy plants. When they arrive here, the capers are washed, dried and matured in salt for 3-4 months. They are then dried and mixed with dry sea salt from the Margherita di Savoia salt pans and potted in their natural state.
