Description
Acetaia San Giacomo is a renowned producer in the heart of the balsamic vinegar region of Reggio Emilia, known for its traditional production of balsamic vinegar and raw fermented vinegar.
This vinegar is made from pure Lambrusco Montericco, a native red grape variety from the Reggio Emilia region, which has long been considered less productive but delivers impressive sensory characteristics: round, fruity and with a fine vegetal freshness. The fermented wine product is oxidized spontaneously and slowly in wooden barrels for at least 6-9 months – without any pasteurization, addition of water or mechanical acceleration. This preserves the intensity of aroma and flavor and ensures a rounded but never aggressive acidity.
Taste: Strong and fruity with notes of red and black fruits, multi-faceted and full of character. Thanks to slow maturation, it has a balanced acidity profile – pronounced but never sharp.
Use: Perfect for rich and varied salads. Ideal as a base for marinades, especially for red meat, roasts, fish or even strongly flavored dishes. Also harmonizes wonderfully with seafood, vegetables and sauces.
