Our Jus: classically reduced – sustainably crafted

Our meat jus are made from the finest basic ingredients you can imagine:

  • Beef bones from South Tyrolean butchers, freshly processed
  • Chicken carcasses from Italian organic farming
  • Organic category B vegetables (e.g. carrots, celery, onions) that are no longer “pretty” enough for sale
  • Fresh herbs and water – nothing else

Everything is slowly reduced for many hours in large pots, then filtered
and gently pasteurized in jars.

The result: clear, powerful jus, completely free from additives,
thickeners, or flavor enhancers.

You can use them pure, extend or refine them – as a base for fine sauces,
to deglaze vegetables, or for robust stocks.
