Description
This is the so-called “purple” type, which is native to this area. They are not propagated in nurseries, but are grown by taking plants from existing plantations. Planting begins in October and harvesting in March. The first specimens are harvested with the whole stalk. Processing, which takes place within eight hours of freshness, consists of initial defoliation and manual cleaning with a small knife and a paring knife. The artichoke is then immediately potted.
