Liquid seasoning for stocks & soups. Dilute pure with water or soup 1:20 for an intense umami flavor.

Description
Garum was already being produced in ancient Rome: Back then, fish was left to ferment in clay pots with salt in the sun for several months. The modern version is based on the same principle – only refined with koji, a traditional Japanese fermentation culture. Meat or fish is fermented with at least 8% salt and koji for several months until an aromatic, dark sauce is produced.
The result is a complex seasoning full of umami that adds depth to dishes and can even be used as a salt substitute. Our garum is made with salt from the Cervia salt pans – 100% natural and without added iodine.
