Acetaia San Giacomo is a renowned producer in the heart of the balsamic vinegar region of Reggio Emilia, known for its traditional production of balsamic vinegar and raw fermented vinegar.
Essenza is a powerful, full-bodied balsamic vinegar made entirely from 100% organic, locally cooked grape must. It is produced without the addition of wine vinegar, thickeners or other additives. The vinegar is matured in small wooden barrels for 6-7 years, partly in a continuous maturing process in which old and young vinegars merge. This organic red wine vinegar is produced exclusively from Lambrusco grapes (organically grown), which are cultivated in the Emilia-Romagna region. The vinegar is produced through spontaneous and extremely slow oxidation (static fermentation) in wooden barrels at natural temperatures, without the addition of water, without pasteurization, without thermal acceleration. The long maturation of at least 9 months gives the vinegar its characteristic depth and balance
Taste: Rich and deep with pronounced notes of dried plums, licorice, sour cherry and cola nut, enriched by fine “oxidative” and slightly wine-like nuances.
Usage: Only use pure & raw: Heat destroys the fine flavors so always use to taste. Ideal for risotto, with mature cheeses, pasta fillings such as ravioli, on creamy desserts or fruit compositions such as fruit salads and ice cream.
