Description
Puntarelle’ are at the heart of CICORIA CATALOGNA, a typical salad from our region. We plant them in October and harvest the vegetables between January and February. Our women defoliate the plant and cut the “scattuni”, i.e. the shoots, by hand and place them carefully in the tannery, where they mature for a few days, then they are harvested and preserved in oil with no added flavorings or spices.
