Description

Acetaia San Giacomo is a renowned producer in the heart of the balsamic vinegar region of Reggio Emilia, known for its traditional production of balsamic vinegar and raw fermented vinegar.

An organic red wine vinegar made from a blend of Lambrusco wines from Emilia. High-quality wine that is fermented spontaneously in wooden barrels for 6-9 months – unpasteurized, undiluted and without thermal acceleration. A pure, lively and intense vinegar. Made from organically grown Lambrusco grapes, which are first vinified and then acetified by very slow static oxidation at natural temperature – i.e. without technical or thermal intervention. This slow, artisanal process (at least 9 months compared to the few days that are usual for the production of commercial vinegar) preserves the aromas and fragrances. It ensures an expressive but never aggressive acidity.

The typical notes of Lambrusco are clearly recognizable, especially red and black fruits. Ideal for: Salads and raw vegetable dips (pinzimonio), marinades for fish, roasts and rich, even fatty dishes.
